Why we mill our own flour, and why we think it makes better bread.
The name is probably the easiest part of the story: all five of my kids have names that start with C, and so Five C Cottage Bakery just made sense. This little business has grown right alongside our family and is very much a true cottage bakery — everything is made from my home kitchen here in Gainesville, Texas.
My love for fresh milled flour really started with wanting to feed my own family better. Over the years, I became more intentional about the ingredients I brought into our home — choosing organic when I could, cutting back on highly processed foods, and learning more about where our food actually comes from.
Then I discovered fresh milled flour, and I was hooked.
Instead of starting with flour that's been sitting on a shelf, I start with the whole grain and mill it fresh myself. The bran, germ, and endosperm all stay together, and the difference in both flavor and nutrition is incredible. What started as something I wanted for my own family quickly became something I wanted to share with other families, too.
That's really the heart behind Five C Cottage Bakery. I want to make the kinds of foods I feel good about putting on my own family's table — using thoughtfully chosen ingredients like organic grains and flours, grass-fed butter, pasture-raised eggs, raw honey, and real ingredients whenever possible. Most of what I bake is made with 100% fresh milled flour, and when a recipe isn't, I use organic, unbleached flour instead. I'm not a factory, and I don't want to bake like one. I mill the grain, mix the dough, shape the loaves, make the pasta, bake the cookies and scones, package your orders, and probably have at least one of my five kids somewhere nearby while I'm doing it. 😂
Five C Cottage Bakery is simply good food, made from good ingredients, for families like mine and yours. And I am so incredibly thankful every time you choose to let something I made have a place on your family's table. ❤️
Fresh milled flour keeps all three parts of the wheat berry — the bran, the germ, and the endosperm. Nothing is sifted away, which means the naturally occurring fiber, protein, vitamins, minerals, and plant compounds stay right where they belong. It also means real, distinct flavor: hard red wheat is hearty and nutty, soft white is mild and delicate, and every grain we mill brings something different to what we're baking.
We prioritize organic grains and staple ingredients whenever possible, along with grass-fed butter, pasture-raised eggs, and raw honey.
We mill hard red and hard white wheat, soft white wheat, rye, spelt, durum, and Kamut, chosen for what's on the bake list that week.
If I wouldn't feel good about feeding it to my own five kids, I don't put it in your order. Just thoughtfully chosen ingredients, fresh-milled grains, and food made from scratch with the same care I put into feeding my own family.
Orders are baked fresh for Friday porch pickup right here in Gainesville, so what you get is only ever a day or two off the mill.
